Ingredients

  • Puff pastries 100 g.
  • Cocoa crumble 30 g.
  • Gelatin powder 5 g.
  • Whipping cream 50 g.
  • Fresh milk 20 g.
  • Water 20 g.
  • 1 Egg yolk
  • Vanilla flavor 3 g.
  • Caster sugar 70 g.
  • Blueberries 40 g.
  • Strawberries 50 g.

Method

  1. Roll out the puff pastries thinly, then slice into pieces as the size you want and prick the puff pastries for expansion, and bring into the oven at 180 degrees Celsius for 20-25 minutes then take out of the oven and leave them cold
  2. Set the pot on fire and put whipping cream, fresh milk, and caster sugar until roiling boil. Then separate it into a mixing cup. Mix vanilla flavor, egg yolk, and caster sugar well.
  3. Bloom gelatin powder with water, mix well and bring it to mix into a mixing cup. After that, when it is mixed well, put cocoa crumble at the final stage and mix well. Pour all ingredients into a mixing cup into a pastry bag, then squeeze the cream on top of the baked puff pastries. Then keep alternating place fruits, cream, and puff pastries for 3 layers. Finally, decorate on top of the pastry with strawberries and blueberries as you want.
